Foxwell was built in 1874 as a shooting lodge for the Vaughan family, who liked the valley enough never to quite leave it. We took the house on in 2019, kept the fireplaces, the crooked staircase and the walled kitchen garden, and let go of nearly everything else.

There are seventeen rooms. There will only ever be seventeen rooms. We are forty minutes from the nearest town, an hour and fifty from the nearest city, and a great deal further than that from anywhere loud.

The cellar, racked to the ceiling with vintages

Seven courses, twenty covers, one long table of Welsh oak. Rhian Morgan cooks whatever the estate and the coast have given her that morning: sewin, salt-marsh lamb, whatever the hedgerow is doing.
